| 1-1/4 cup | oat bran | | 1 cup | unbleached flour | | 1 | 1-ounce packet instant plain oatmeal | | 3/4 cup | raisins (optional) | | 1 Tbl. | baking powder | | 1 tsp. | cinnamon | | 1/2 tsp. | allspice | | 1-3/4 cup | nonfat milk | | 3 | egg whites, beaten | | 1 Tbl. | safflower oil |

| Heat oven to 425 degrees. Mix all of the above ingredients together and pour into muffin tins lightly coated with non stick cooking spray. Bake for 15-17 minutes or until tops are golden brown. |
